1. INTRODUCTION Sodium benzoate (SB) is a chemical substance that is commonly used as a preservative in soft drinks, fruit products, pickles and sauces (Srour, 1998) and in the treatment of some metabolic (urea cycle disorders and hepatic coma) diseases. Sodium benzoate ([C.sub.7][H.sub.5][O.sub.2]Na; benzoic acid, Na-salt ; mol.wt. 144.11) has a melting point above 300'C. It is about 200 times more soluble than benzoic acid. Its pH is about 7.5. Dry Na-benzoate is electrically charged by friction and forms an explosive mixture when its dust is dispersed in air (Maki et al., 1985). About 0.1% is usually sufficient to preserve a product that has been properly prepared (Chipley, 1983).
